Il commence sa carri\u00e8re aupr\u00e8s de la c\u00e9l\u00e8bre M\u00e8re Brazier, puis travaille dans de grandes maisons fran\u00e7aises comme Point \u00e0 Vienne ou Lucas Carton \u00e0 Paris.<\/p>\n\n\n\n<p class=\"has-black-color has-text-color has-link-color wp-elements-0471340cad38d6ded9dc59285bab04ed\">En 1958, il retourne dans l\u2019h\u00f4tel familial \u00e0 Collonges, o\u00f9 il obtient sa <strong>1re \u00e9toile au Guide Michelin<\/strong>. Il d\u00e9croche la <strong>2e \u00e9toile en 1962<\/strong>, puis la 3e en 1965, qu\u2019il ne perdra jamais. En 1990, il fonde l\u2019<strong>Institut Paul Bocuse<\/strong> (aujourd\u2019hui <strong>Institut Lyfe<\/strong>) \u00e0 \u00c9cully, d\u00e9di\u00e9 \u00e0 la formation des futurs professionnels de l\u2019h\u00f4tellerie et de la restauration.
